News from Tom's Pantry for the week of May 11th 2020.

Hello folks. 

I will bake this Wednesday May 13th for pick up at my home on Wednesday evening, or local delivery around Berwick.

I plan a delivery route on Thursday morning going north through Crysler and Limoges. I have to make a quick trip into Ottawa to buy more flour. Then I head east on the 417 to Casselman, St-Isidore, Vankleek Hill, and Ste-Anne-de-Prescott. Then I travel back home through Alexandria, Maxville, Moose Creek, and other points in that loop.

There is a minimum order of two loaves for a home delivery on a scheduled route. Payment is by cash upon delivery or e-transfer in advance.

I need your order please by Tuesday evening 9pm in order to prepare enough levain overnight.

And a reminder - I also offer flour and baking ingredients, see the second page of the price list. If you need bulk bags, please tell me by Monday evening, so that I can order from my suppliers and pick up on Thursday morning. 

A delivery trip through Cornwall?

I have not yet established a delivery route south to Cornwall. I would like to know from folks in that direction if you would like tri-weekly deliveries (Newington, Long Sault, Ingleside, Cornwall, South Glengarry, Apple Hill, Monkland). Please write to me.

This week's feature is Rye bread & Lavender.

I had the pleasure of meeting Joseph and Rebeckah Nitti at Temperance Farm, a new organic farm producing culinary lavender in St-Isidore.

That kicked my creativity into high gear. I made a loaf of organic rye sourdough bread flavoured with their lavender. It was an absolute delight and I recommend it to everyone. 

Admittedly, their farm is young and their full production year will be in 2020. In the meantime, I have organic lavender from Azulée​, an organic lavender farm in the Charlevoix region of Québec.

My new proofing box

Here is my homemade levain proofing box for sourdough bread. I need the levain to develop the sourdough culture overnight and then make bread the next day.

Leaving the levain at room temperature was too cold, especially in the winter, and the levain did not develop. I tried the "proofing" option on my over but that was too hot.

Covid-19, local food, and home cooking

Almost every day, I hear on the news references to people cooking more and making sourdough bread at home during this "stay home" COVID-19 crisis.

Thank you to Anne in Russell for sharing the story of sourdough bread and the need for more education in home economics which builds scientific appreciation, relationships, ecological awareness, and self reliance. 

South Glengarry township is working with the Glengarry News to offer some free advertising to local business​ to help reach their local customers.

A funny thing happened to me...

I was waiting in my car at the eye doctor in Ottawa on Thursday. They make patients wait in their car instead of the waiting room.

Earlier that day, I had picked up a car load of flour and baking supplies from my wholesalers in Ottawa.

The man in the next car noticed the load in my car and commented "You have a lot of flour there, what do you do with it?" I explained my story of home made sourdough bread and he was delighted. 

He explained that his wife had been looking for flour and could not find any in the grocery stores. So I offered and sold him a bag of organic all purpose flour. He was delighted. "My wife will be thrilled that I found flour in a parking lot", he exclaimed.

Wow! DId you hear the news?

There is a new local food distribution business in Kemptville​ serving the region and reaching into Ottawa and east to Winchester. You could get on board as a producer or as a consumer.

Farmers Markets of Ontario is investing to put 100 farmers markets onto online sales platforms to extend customer reach and deal with the problem of accessing physical space to mount a farmers market during the COVID-19 crisis.

Helping others in crisis

Even in ordinary times, we and the people around us live with grief, disappointment, heartbreak, stress and more. This COVID situation makes matters worse, such as debt stress, business challenges, loss of employment, too many people in the house, etc.

When responding to the needs of others, or when asking for help, we can try empathy instead of sympathy. It is an effective way to support someone through a crisis.
