Happy 2018!

I hope everyone is enjoying the new year so far. Even with a fresh start of the year, winter can feel daunting and stretches us out of our comfort zone. I find myself having many conversations around, 'How can we do less? Rest more? Stay in bed longer?' It feels natural in the winter to withdraw a bit and Ayurveda encourages this kind of hibernation so we can truly have the energy to spring forth when the time comes. It can be challenging in our fast-paced world to take a step back, but hopefully even in small ways we can honor our inner rhythm and find space to listen, reflect, and just be. Ahhhhh. 

As the season continues on, I wanted to share a few announcements and upcoming events. Coming up first on February 23-25th, I have the pleasure to cook for a beautiful weekend yoga retreat in Ojai, California at Ojai Spirit House. If you're needing a weekend away to recharge yourself I highly recommend checking it out

On April 7th, my mom and I will be holding our annual day-long Silent Retreat again at Open Sky Retreat Space in Sebastopol, California. The day will include guided meditation, medical qigong, an Ayurvedic lunch, gentle yoga, and yoga nidra. You can register here for the early bird special if you sign up before February 21st. 

Lastly, stay tuned for more Wellness Hikes coming up this spring in Sonoma County. We'll be having an ocean hike and a forest hike - each including outdoor yoga and the sharing of yummy local foods. Regular classes are held at the Center for Inner Health and Stillness in Santa Rosa, CA. No prior experience is required and drop-ins are welcome. Yoga mats and props are provided. Please contact me​ to reserve your spot. 

AYURVEDIC RECIPE

INSTRUCTIONS:

Winter Kale Quinoa Salad

Ingredients:

  • 1/2 cup of quinoa
  • 1 bundle of kale
  • 1 cup of pomegranate seeds
  • 1/2 cup of walnuts
  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 1/2 tsp. Dijon mustard
  • 1 Tbsp honey
  • Salt and pepper to taste 
  • Rise and soak the quinoa. Add 1/2 cup of water to a small saucepan. Bring to a boil, cover, reduce heat, and simmer for about 13 minutes (you may need to add more water). Remove from heat keeping the quinoa covered and allow it to sit for about 5 minutes then fluff quinoa with a fork.
  • Steam kale separately and then in a large bowl mix together the kale, quinoa, pomegranate seeds, and walnuts (optional: dry roast walnuts)
  • For the dressing, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small bowl.
  • Pour dressing over the salad and toss together until coated. Top with additional pomegranates, and walnuts as desired, serve and enjoy!  (source: eatyourselfskinny. com)
