Tom's Pantry for the week of May 18th 2020.

Hello folks. 

I now have a cycle of three weeks with three delivery routes: south-east through Cornwall, north-east to Vankleek Hill and Alexandria, and north-west to Ottawa, Metcalfe and Chesterville. 

I will bake this Thursday May 21st for pick up at my home on Thursday evening.

I plan a delivery route on Friday morning going south through Finch, Newington, Long Sault, and Cornwall. In the early evening, I return home through Lancaster, Apple Hill, and Monkland. And I can stop at other points in that loop.

Next week, I will deliver on the north-west route. The week after, I will cover the north-east route. Keep watching this newsletter for details.

There is a minimum order of two loaves for a home delivery on a scheduled route. Payment is by cash upon delivery or e-transfer in advance.

I need your order please by Wednesday evening 9pm in order to prepare enough levain overnight.

This week's feature is flavoured kamut bread.

Kamut, the branded name for Khorasan wheat (Triticum turanicum), is an ancient grain type. Khorasan refers to a historical region in modern-day Iran in the northeast and parts of Central Asia including modern-day Afghanistan. This grain is known for a cream colour, delicate texture, and rich, nutty flavor. 

Alone, whole Kamut flour makes a tender bread with a light nutty flavour. That condition gives us the opportunity to add a variety of outstanding ingredients and flavours such as old cheddar cheese, chocolate with either orange or cranberries, almonds and raisins, chocolate with hot peppers, or walnuts and dates.
