Tom's Pantry for the week of June 15th 2020.

Baking and delivering this week!

I assembled a baking schedule on my website: http://www.tomspantry.ca/.

To summarize, I will bake this Wednesday June 17th for pick up at my home on Wednesday evening.

I will deliver to the Parkdale Farmers Market in Ottawa early Thursday morning for pre-paid orders to pick up at the market. The Parkdale market is now open for public browsing, but I will only drop off and not stay for the day.

I will deliver to homes on Thursday going north through Crysler, Limoges, Embrun, and points around Ottawa. Then in the late afternoon Thursday, I will deliver to homes on my trip home through Metcalfe, Russell, Winchester, Chesterville and other points in those regions.

I need your order please by Tuesday evening 9pm in order to prepare enough levain overnight. See the product descriptions and ordering considerations here. And then, view the price list and order online with Local Line

Next week Saturday June 27th, I will attend the Vankleek Hill Farmers Market and deliver to points along the way there and back. On that day, I will also loop through Cornwall for deliveries.

There is a minimum order of two loaves for a home delivery on a scheduled route. 

And a reminder - I also offer organic flour and baking ingredients, also available in the virtual store.  

You cannot find some items on my menu? 

Honestly, there is not much money in baking bread, about minimum wage. So I need to be as efficient as possible with my time. One decision is to work with batches of 6 loaves. I cannot be bouncing around with small batches given the wide variety in my product list. I loose too much time.

So I split the product list into 3 groups. The group of the most popular items are available every week. The two other groups of less popular items are available on a rotating monthly schedule. 

So if you cannot find something this week, it is probably on rotation for next month. Please see the schedule on the website - http://www.tomspantry.ca/. And you cannot go wrong. The online ordering system hides products that are not available in any given month.

This week's feature is french baguette.

The baguette is a classic favourite with cheese and pâté. The sour and slightly sweet taste makes it irresistible.

I have to admit that it took lots of practice to get this right. I had to overcome problems with the dough sticking to the bread board, too much heat and too much burning, loaves sticking to each other, and too much dough for the pan.

But practice makes perfect and my baguettes are turning out nicely. Mind you, I use the sourdough method which makes them slightly heavier and more chewy than baguettes with yeast.
