SEASONAL RECIPES

We are in full swing with winter squash harvest time. Winter squash are wonderful because they can store through the winter: hence the name. We store our winter squash in the basement where it is dark and the humidity is low, and they last all the way to spring and sometimes beyond. Now is a great time to not only stock up while supply is high, but also to try your hand at some different and creative recipes utilizing these nutrient-packed vegetables. 

Almost any winter squash can be a perfect substitute for sweet potatoes, cooked in the crock pot for soups and purees, or baked and stuffed with whatever your heart desires. It's easy to add roasted or grilled chicken or sausage to the entrees listed. Here are some ideas to get you started.

AUTUMN MILLET-STUFFED DELICATA SQUASH

Delicata squash is very versatile, and also wonderful because when cooked the skin is soft enough to eat. This recipe allows you to swap ingredients in and out to your liking. The original recipe calls for couscous, but I have substituted millet. You can also use quinoa, wheat berries, or whatever you have on hand. We have everything you need.

SAUSAGE STUFFED RED KURI SQUASH

This is a great prepare ahead of time recipe, and would even be nice as a holiday appetizer or main course depending on the size of the kuri squash you choose. We have everything you need plus some additions to make it even more flavorful: I would add 1/2 cup chopped leeks, and a diced jalapeno to the filling mixture. You could also substitute green kabocha squash, if desired.

HERBY BLUE HUBBARD GRATIN

Blue hubbard squash has always been my mom's favorite winter squash. It's sweet, rich + creamy with a slightly nutty flavor. Many get overwhelmed by their size, but you can just chop what you need for a recipe, then store the rest of the uncooked squash in the freezer for later use. Substitute vegetable broth for the wine, dried herbs for fresh (think 1T fresh herbs = 1tsp dried), white cheddar for gouda, and we have everything else you need. Adding some chopped portabella or shittake mushrooms and fresh grated turmeric would also be great nutrient packed additions.

CROCKPOT BUTTERNUT SQUASH SOUP

Any recipe that allows me to throw everything in the crockpot and walk away makes me happy. This recipe is full of nutrients, easy, and very flavorful. What's also nice is you can substitute the butternut with red kuri, kabocha, hubbard, acorn, or a combination. We have you covered with the ingredients.

SAFFRON CROCUS BULBS + FALL PLANTS

We now have saffron crocus bulbs available, and now is the time to get them in the ground for spring harvest. Last week we received our first round of fall plant starts and flowers and more will be here by mid-/late week.

Planting garlic arrives in October.
