The weather ended up being beautiful, and friends and families were able to come and hang out on the farm while building herb gardens and learning more about some of the holistic health care professionals in our area. It's time for more seasonal recipes. The first three come from Molly Kreb's book Eat More Plants . If you are not a strict vegetarian/vegan, it's super easy to add some of our local pasture-raised proteins to any of the first two dishes. Click here to access all three of Molly's recipes. We are in full swing with spring's berry season, and the last recipe takes advantage of the delicious local organic strawberries and blueberries we have to offer. Strawberry, Avocado, Spinach & Basil Quinoa Salad We recently made these salads for lunches, and they were absolutely delicious. I roasted one of 8th Generation Farm's pasture-raised whole chickens in a crockpot for Frank to give him that extra filling protein he needs. All of Molly's recipes are super clean with minimal ingredients, and her homemade dressing recipes never disappoint. We have everything you need to make this tasty recipe, including substituting Goat Lady Dairy's Feta-Style Farmer's Cheese. Veggie Fajita Bowls with Cilantro Lime Crema These fajita bowls are incredibly flavorful and filling. I bet some marinate grilled flank steak sliced thin would put this recipe over the top. Double or triple the recipe to last more than just a couple meals, and cut your kitchen time in half for the week.
