So you think Summer is no time for curry, well how about spice cured fish, a sort of ceviche or a South Indian red rice and yoghurt salad?

Spice cured fish with crispy rice

Serves 4


  • 500g sashimi quality thick fish fillet eg cod,kingfish , mulloway, ocean trout Anything you've caught yourself and is super fresh works well too!
  • 2Tb easy Curry spice spice mix
  • 1Tb salt
  • 3Tb sugar
  • 4 limes juice only
  • 2Tb finely Chopped coriander 
  • 2Tb finely chopped mint

To serve 

  • 1/2 cup diced cucumber 
  • 1 cup rice bubbles 

Method: With a very sharp knife cut the fish into small dice. Put into a bowl with curing ingredients. Leave in a cool place for 15 minutes. Remove from liquid. Toss with the cucumber and rice bubbles and serve immediately.

Healthy seems to be the key word for 2017 and while we fill our pantries with every superfood we can find,rushing to eliminate other everyday favourites on the say so of the latest diet, fad or fantasy? : seriously does anyone really know whether quinoa ( so last year) or virgin coconut oil will save our civilisation?

Here at Ragini Spice, we content ourselves with sourcing the best Spices we can, so everyday recipes taste that much nicer and while we dive into that bowl of natural flavours, if our liver or pancreas or heart works that much better, well it seems to be a win win situation. Something our food gurus have known for 5000 years.
