Back to school (and every day) calls for simple, healthy recipes that can be prepared ahead of time and make the most of seasonal ingredients and garden harvests. Here are a few to try out this week. Let us know what you think.


Baked Pesto Chicken Thighs

Looking for something to do with all of that basil in your garden? Whip up a batch of homemade pesto! Or, if you don't have basil nor the time to make your own pesto, try out our new pesto from Kensington Food Co. (Philadelphia, PA) over 8th Generation Farm's pasture raised chicken thighs (Rockwell, NC). Marinate your chicken thighs in the pesto overnight, or for at least four hours, then bake. It's that easy.

Parmesan Garlic Roasted Carrots

While you've got the oven on to bake your pesto chicken thighs, you can throw in these carrots along with them. This side dish is not only easy, but incredibly flavorful with simple and healthy ingredients. We all need more ways to get our daily vegetable dose, and we have what you need to whip up these tasty carrots: Organic NC carrots; Sierra Nevada pasture raised butter (Willows, CA); Frontier Organic garlic granules (1/8tsp = 1 clove), Italian seasoning, pepper, and parsley (Norway, IA); Rumiano Organic pasture raised parmesan cheese (Crescent City, CA); and NaturalZing Organic pink Himalayan sea salt (Mt. Chocolate Chip Zucchini Bread: Dessert or Breakfast?

Frank would promptly answer, "Breakfast - that would go with my coffee." Either way, this recipe uses another late summer garden find that seems to be in abundance right now: zucchini.
