NEW HOURS + SEASONAL RECIPES

Picture

With the longer days comes our seasonal change in hours of operation. We will now be open the following times, starting Monday, March 13:

Monday through Friday | 9:00am - 6:00pm

Saturday | 9:00am - 5:00pm

It's time for more seasonal recipes to make your meal planning easier. This time around I wanted to incorporate one of the great local brands we carry that often gets overlooked. Marsh Hen Mill (Edisto Island, SC) focuses their efforts on growing and milling small-batch heirloom, stone ground grains. Family owned and operated, their products are gluten-free and either organic and/or Non-GMO. They have even revived an heirloom red corn that was thought to be extinct.

Try your hand at one or all of the great recipes below.

CREAMY [CAROLINA GOLD] RICE SOUP

I can't tell you how many times we have made this recipe at home (without the bacon :). It never fails to be filling and loaded with flavor. Often, I will double the recipe so that it can cover more meals. The less time standing over the stovetop the better (for me anyhow...I'd rather be pulling weeds...don't worry; I like pulling weeds ;). With this chilly weather, this soup is a great hearty choice. You could even add some shredded chicken for some extra protein.

We have everything you need (minus the celery): grass-fed butter; yellow onion; carrots; thyme (fresh or dried); salt; pepper; garlic; mushrooms; bacon; flour; Marsh Hen Mill's Carolina Gold Rice (instead of wild rice); vegetable stock; and heavy cream.

Find the full recipe here.

[STRAWBERRY OR APPLE] CORNMEAL MUFFINS

I love this recipe because it is versatile and you can use whatever fruit you have on hand or is in season. You can also double this recipe and freeze some of the muffins for later.

We have mostly everything you need: strawberries and/or honeycrisp apples (instead of cherries); Marsh Hen Mill's red, yellow or white cornmeal; chicken or duck eggs (duck eggs are great for baking!); vanilla extract; grass-fed butter, yogurt; all purpose flour; and rolled oats.

PESTO POLENTA W/THYME ROASTED MUSHROOMS + CHICKPEAS

This recipe is definitely going in my personal meal plant this week. I have never been disappointed by any of Half Baked Harvest's recipes, and I'm excited to try this one.

We have everything, except the red pepper flakes + burrata cheese (psst...we may be getting fresh, local water buffalo mozzarella soon): olive oil; mushrooms; chickpeas; thyme + basil (fresh or dried); garlic; salt; pepper; Marsh Hen Mill's polenta; grass-fed butter; kale; and pine nuts.

Find the full recipe here.

VEGGIES [CHICKEN THIGHS] N' GRITS

This is also another great recipe that you can modify by adding/substituting your favorite veggies or protein.

We have what you'll need (minus the celery), plus some extras: vegetable broth; Marsh Hen Mill's blue or red grits; lemon juice; salt; pepper; tomatoes; shallots (instead of green onions); cheddar cheese; olive oil; grass-fed butter; yellow onion; bell pepper; jalapeno peppers (for some depth of flavor); grilled or roasted chicken thighs (or protein of choice); garlic; parsley (fresh or dried); and kohlrabi (you can also use the greens!).

Fact of the Week: Contrary to popular belief, American farmers were not fond of Daylight Saving Time (DST). Farmers' schedules are dictated by the rising and setting of the sun, and DST was more disruptive than helpful to their work.                                                                                                                   ~The History Channel
